Culinary arts students at The Art Institute of California – Inland Empire in San Bernardino shared their favorite Memorial Day recipes with us. Here are some ideas for parties and cookouts this weekend.

Receta 1: Garlic and onion shrimp (Camarones con ajo y cebolla)

Yaribel Chavarin noted that if you want to think outside of the grill for the holiday weekend, try some seafood, a staple at her family’s gatherings. “One of my favorite seafood dishes I enjoy cooking for my family and friends is garlic and onion shrimp,” she wrote.

Ingredients:

1 pound headless shrimp in shell, de-veined

1 stick of butter

2 tablespoons garlic salt

1 whole white onion, sliced

Hot sauce, such as Tapatio, to taste

Procedure:

1. In a large non-stick pan, heat up the butter and lightly saute the onion, approximately 7 minutes.

2. Season the shrimp with garlic salt.

3. Add the shrimp to pan and add hot sauce to taste. Cook until the shrimp are fully done (approximately 10-12 minutes). Can be served with cucumber slices or with some white rice.

Receta 2: Coffee ribs (Costillas con sabor a café)

Norma De La Cruz loved cooking and baking when she was growing up, but never expected she would pursue a degree in culinary management. “I hope to someday own my own restaurant to serve people the same delicious food I cook for my family now,” De La Cruz wrote.

Her spin on the traditional meats of Memorial Day is a coffee-rubbed rack of ribs.

Ingredients:

1 Full rack pork ribs

4 tablespoons seasoning salt

3 tablespoons ground black pepper

1/4 cup ground instant coffee

2 tablespoons paprika

1/4 cup olive oil

Procedure:

1. Pat rack of ribs dry with a clean paper towel and heat the oven to 350 degrees.

2. Mix salt, pepper, coffee and paprika in a large plastic bag that can be sealed. Close bag and shake well to mix all ingredients.

3. Put rack of ribs inside bag and shake until the rack is fully covered by the powder.

4. Place ribs in a baking sheet, and drizzle the olive oil over the top.

5. Place ribs in oven and let them bake for 2 hours. The time may vary depending on the oven. When done, the top of the ribs will look like they are burned, but it’s only the color of the coffee.
